Thanks everyone. "Rich" cheese is, well, "rich". Where "rich" means full of The Goodness that is found in great cheeses. Never an "old" cheese; for old cheese is so very rarely good. Think instead of mature cheese, cheese that is fully ripened. Never a moldy cheese; for moldy cheese is "Not Good." Cheese with mold is one thing (and quite often good too), but cheese left out to get moldy - Yuck-Ooh! Never a young cheese; for when I think of young cheese, I think: Velveeta or Cheez Whiz. These greasy, oily excuses for "cheese" can never be good. ("Cheese" "whiz"?!? What, oh what, were they thinkin'??)
